Questions and Answers

We are looking for candidates with solid operation skills, who are motivated and have a desire to share our delicious mission of transforming the culinary culture across the U.S.. Although we love to work with first-time entrepreneurs, we are also looking for multi-unit owners that understand the power of leveraging cross-marketing efforts by combining cafés, kiosks, and carts.

1. How did the franchise get started and what is the background of your executives?

While Rosalie Guillem was living in Florida and her daughter Audrey Guillem-Saba was living in France, they had a dream – to share delectable French macarons with the world and to reunite their family. Hailing originally from France, they were surprised to find that the American take on the macaron was often simply sugar spun into a cookie shape or that the macaron was frequently confused with the very different coconut macaroon. They knew that with a little consumer education, and by treating the American palate to true French macarons made from only the best ingredients, they could bring a true taste and texture sensation to the marketplace.


Rosalie, Audrey and their team spent months working with a highly acclaimed, French-trained pastry chef, and together they selected the best quality ingredients to create tasty, sweet morsels of crisp meringue with soft, flavorful fillings that created an explosion of favor with every bite. In 2009, the Guillems gathered their family in America and opened the first Le Macaron French Pastries location in Sarasota, Florida. They began franchising in 2012 and now they enable a thriving network of dedicated franchise owners who operate multiple stores.


2. What sets you apart from your competitors?

The French authenticity of the business. All product is baked by French chefs using the French recipe. This translates into our product and into the experience we provide to our customers.


3. Why a franchise vs. a startup or existing business?

We handle all baking and preparation in our Le Macaron French Pastries confectionary kitchen. By delivering all pastries fresh to each location, we effectively eliminate on-site production; making the operational aspect of running a Le Macaron French Pastries franchise that much easier!


4. Can you describe an ideal owner for Le Macaron.

Our Franchise Owners, whether owner-operators or investors take pride in creating an upscale retail oasis that introduces a new culinary standard within their communities. They love to have fun in their cafés and genuinely engage customers while sharing a piece of French culture.

5. Tell us a little about Le Macaron support and training program.

Franchise Owner 3-day training takes place at Le Macaron French Pastries Corporate offices in Sarasota, Florida and a minimum of 1 day at the Franchise Owner’s new location prior to opening day. Our training covers store setup, inventory management, and ordering, POS system, product knowledge, operations and customer service, quality control, human resources: employee training and hiring, marketing best-practices, accounting, reporting and more.


There is a thread of enthusiasm that runs through the company that stems from the founders and executive management team. Our team is here to share experiences and support franchisees through every step and beyond. We are dedicated to providing continual support in operations, HR, marketing, and accounting to ensure Franchise Owner success.


6. What kind of input will I have in marketing and advertising?

Every Franchise Owner has direct access to our dedicated Marketing Specialist who assists with grand opening marketing plans and ongoing marketing through direct mail, print, signage, digital media, and more.


7. Do I have to own a brick and mortar location? If so, can you tell us a little about that?

We offer cafés, kiosks, and carts to ensure there is a version of Le Macaron French Pastries for everyone! By combining and utilizing multiple models, there is an amazing opportunity for Franchise Owners to have numerous options to expand and scale their business and take advantage of cross-marketing and multiple revenue streams.


  • Café: Flexible footprint, 800-1,000 square feet- Vibrant lifestyle centers, historic areas, shopping and dining destinations with high foot traffic.


  • Kiosk: This is a permanent kiosk, designed for malls that occupy 120 to 150 commercial square feet of space. Kiosks offer all or the majority of menu items offered by our cafés- Designed to sit right in the center of where the action is whether that is a mall, college campus, train station, airport or shopping/dining destination with high foot traffic.


  • Cart: Designed with mobility in mind. Our semi-permanent carts allow our Franchise Owners to reduce their rent but still bring in the same revenues as our café’s and kiosk options because 90% of our sales come from our authentic French macarons and gelato- Designed to go where the customers will be; event venues, stadiums, malls, convention centers, festivals, and amusement parks.
